Recipes are great and all, but sometimes you just need to make something quick and dirty. These days, it’s pretty common to have a schedule that’s busting at the seams. It’s easy to just give up and pick up dinner somewhere — but that can get expensive and it’s usually not very healthy.

Make Your Own Fresh Gluten-Free Pasta

Fresh pasta shouldn’t be a luxury — it should be a human right. As part of the healthy Mediterranean diet, pasta is meant to be celebrated and enjoyed. But what about those of us who can’t eat gluten due to celiac disease or non-celiac gluten sensitivity? There is a serious gluten-free foods deficiency happening in some parts of the United States right now (especially in Memphis, Tennessee — where I live), which is something I’d like to see corrected. Honestly, it’s as though people decided you aren’t eating gluten just to annoy them or something. So, what do you do when nobody gives you what you want? You make the thing you want while cussing those insensitive gluten-eaters!

Spanakorizo

Here's a recipe I've been working on (actually, I stole it from a magazine and changed a few things to increase the veggie content). Recently, I have been interested in recipes from the Mediterranean region. It's probably no surprise to you that the way people naturally eat in that area is super good for your health -- high in vegetables, fiber and healthy fats. This particular dish, Spanakorizo, comes from Greece and has bright, lemony flavors. It is surprisingly easy to make and makes a great addition to a meal. Just top with chickpeas or baked salmon to boost the protein!

Avocado, Cocoa and Beet Smoothie Bowl

What’s better than getting a head start on your healthy eating? Well, lots of things, but putting your nutrition first is pretty rad, too.

This was my go-to smoothie bowl for a long time, and for good reason. Contrary to how it may seem, cocoa goes really well with avocado and beet. The earthiness of the beets blends perfectly with the smoothness of the avocado and the sharpness of the cocoa.

Veggie Cheese

Real talk — cheese is delicious. If you are taking a break from it, avoiding dairy can be annoying — especially when it comes to not having cheese.

Vegan cheese alternatives a.k.a. "fauxmage" (from the French "faux" for fake and "fromage" for cheese) have become extremely popular in the last few years. There are tons of cheese alternatives in grocery stores, some of them are convincing and some are 100% gross.

Chocolate Avocado Pudding

It should be no surprise to anyone who has been making an effort to eat well that avocados are healthy. It's kind of a no-brainer. Avocados have healthy fats, fiber, a creamy texture and a mild taste that takes well to sweet or savory dishes. They even have a surprising amount of protein! But when it comes to eating more avocado, most people automatically start go right for the guacamole. Ditch the chips and guacamole for a second and try something new.

How to Make Your Own Kombucha

You don’t have to be a trippy yoga-teacher or cult-leader type to love what tastes like the lovechild of sweet tea and champagne. One of my favorite drinks is kombucha. Until fairly recently, it wasn’t a thing most places outside Southeast Asia. Now it is one of the fastest growing bottled beverages in the world. But many people don’t even realize that making kombucha at home is easier than you might think. And don’t get me started on the money you can save, but basically you can brew an entire batch for the price of one bottle of booch!
