Mango-Banana Smoothie Bowl

Nothing beats a refreshing, cool smoothie bowl on a hot summer day. Whether you think they’re hippy-dippy bullshit or nutrient-packed flavor bombs, there’s no denying their value if you live somewhere that gets hot early.

Smoothie bowls aren’t always a balanced meal with protein, fat, carbs and fiber. Often, they are little more than blended frozen fruit, which only provides the carbs and fiber. This recipe is rounded out with protein and healthy fats, which help it stick with you for longer and keep blood sugar stable.

Ingredients

  • 1/2 banana, frozen

  • 1 cup mango chunks, frozen

  • 1/2 cup cauliflower rice, frozen

  • 1 cup butternut squash, frozen

  • 2 level scoops Thorne MediClear-SGS (vanilla)

  • 1 level scoop Thorne FiberMend

  • 1 tbsp mint loosely packed

  • 1 tbsp unsweetened shredded coconut

  • 1 tbsp slivered blanched almonds

  • 8-12 oz water

Instructions

  1. Fill the blender with banana, mango, cauliflower, butternut squash, MediClear-SGS, Fibermend, and half of the mint

  2. Fill with water to halfway to the top of other ingredients

  3. Blend to a smooth texture that still keeps its shape, using blender plunger to mash everything down into the blades

  4. Transfer to bowl and top with coconut, almonds and remaining mint leaves
