Dairy-Free Sausage and Egg Bake

It can be hard to prep meals ahead for breakfast. No wonder so many people skip it or just grab something less-than-ideal from a drive-through or a snack machine!


Maybe I was traumatized by one too many casseroles at Casseroles church potlucks growing up, so when my wife told me she wanted us to make this recipe (which she made up), let's just say I wasn't feeling it. At all. But we made it anyway because healthy relationships include compromise. I tasted it and you know what? It was bangin'!

Personal taste aside, casseroles don't exactly scream healthy meal prep, do they? But they don't all have to be greasy, high-calorie dairy bombs.

This recipe is balanced, gluten and dairy-free and makes 12 servings, which is enough to feed 2 people for 6 days. It has a moderate amount of fat, plus protein, fiber and carbs, which can help keep blood sugar and energy stable throughout the morning.

It takes 20-30 minutes of prep time plus the time it takes to cook. While it’s baking, you’ll be freed up to do other things. This recipe makes 12 servings, or enough for 2 people to have it for breakfast for 6 days.

Ingredients

  • 1 lb. breakfast sausage

  • 1 Onion

  • 2-3 cloves garlic

  • 1 container frozen organic chopped spinach (about 5.5 cups)

  • 1 package (2 cups) Daiya cheese (cheddar flavor)

  • 8-12 slices gluten-free bread

  • 15 eggs

  • 1/2 tsp black pepper

  • 1/2 tsp cayenne pepper

  • 1-1/2-2 tsp. sea salt

  • Avocado oil (for greasing the pan)

Instructions

  • Preheat oven to 350 degrees Fahrenheit

  • Thaw and drain the spinach. squeeze out as much water as possible.

  • Slice the bread into 1/2-inch cubes and toast them for 6-8 minutes at 350 degrees Fahrenheit.

  • Brown the sausage over medium-high heat, stirring often.

  • Chop the onion and garlic and set aside.

  • Mix the eggs with pepper, cayenne and salt and set aside.

  • When the sausage starts to brown, add the onion and garlic. Cook until slightly translucent and remove from heat.

  • Combine sausage/onion/garlic mixture with Daiya cheese, spinach and bread cubes. Transfer to a large, greased baking dish.

  • Pour the egg mixture over the contents of the dish.

  • Bake for 35-45 minutes at 350 degrees Fahrenheit. When it is ready to come out, it won’t jiggle, and you’ll be able to stick a knife into it and pull it out mostly clean.
